The sacrifice command allows you to get rid of crap or junk objects.  You may
sacrifice most anything that lies on the ground.  The gods prefer that the
world a be clean one, and may reward you with favor for cleaning up.

The most common things to sacrifice are corpses.  Said a wise cleric once:

"Sacrificing corpses of enemies you slay makes the gods happy you're
 attempting to keep their world disease-free.  Thus, you are rewarded gold.
 The amount of gold you are rewarded for sacrificing corpses is level based,
 so at the lower levels you will receive more.  Don't be surprised if the
 amount you receive goes down as your level goes up."

Sacrificing objects of value is necessary to convert to a god, and to
gain favor with cleric oblation tasks.
