While all mammals produce milk, only special domesticated breeds that are
used to being handled can be milked. Milking is simple enough that anyone
exercising sufficient care can collect it from a willing animal. Being
skilled at 'bottling' helps you to coax forth higher quality yields.

Common dairy animals are cattle, goats and sheep. Some tribes on the fringes
of civilization may also milk yaks, camels, horses, donkeys and even deer.
You can see a list of milkable animals (if any) in a room by typing 'milk'.
If you are in a larger settlement, 'where milk' can tell you if there are
any dairy animals in the city limits.
